Breakfast through to late evening, across several venues: a well-established hospitality operator in Grey, on the West Coast of New Zealand, is hiring a Sous Chef or Senior Chef de Partie to keep food quality consistent and service efficient in a range of settings.

Job titles count for less than what you can prove. The selection process weighs your real kitchen history, the responsibilities you have held, your qualifications and evidence of your skills. It suits a chef with a genuine commercial kitchen background who wants to take charge of quality, preparation and service.

Key Responsibilities

  • Take ownership of the kitchen sections and service duties given to you
  • Turn out meals at a consistent commercial standard for the breakfast, lunch and dinner services
  • Run mise en place and the daily prep list, inspecting the condition and quality of ingredients before using them
  • Make up sauces, gravies, garnishes and other elements, and adapt meals for dietary needs and special requests
  • Portion and plate each dish so it looks right, and hold quality and consistency when the pressure is on
  • Operate and control the commercial ovens, grills and cooking equipment, and keep stations safe, clean, tidy and in working order
  • Track stock and support inventory control
  • Coordinate with the wider kitchen brigade and coach junior cooks with training and practical help
  • Follow food safety, hygiene and workplace rules
  • Pitch in on functions, special events and extra services, and offer practical ideas for seasonal menu changes
  • Switch between the needs of different venues and cover rostered shifts, weekends, early starts and late finishes included

Requirements & Eligibility

  • Has worked in a commercial kitchen and can prove it
  • Holds an NZ Register Diploma, or has a minimum of 3 years' relevant professional experience
  • A real employment record that matches the kitchen experience level claimed
  • Can provide evidence for qualifications and previous jobs
  • Hands-on cooking and food prep skills of a high level
  • Experience running busy services, and confident on breakfast, lunch and dinner
  • Understands portioning, plating and food quality well
  • Fast, efficient worker who keeps professional standards high
  • Communicates clearly and works well with others
  • Steps up to lead during service and has helped train or support kitchen staff
  • Sound knowledge of food safety, hygiene and commercial kitchen practice
  • Open to rostered shifts including weekends, early mornings and evenings
  • An advantage: baking or dessert experience
