Key Responsibilities
- You are in charge of one station, from the first prep to the last ticket
- Get mise en place done every day to match what each service needs
- Cook from the menu with proper commercial methods, so taste, portion and plating never drift
- Hold your speed when the rush and peak periods hit
- Confirm your station is set and let the senior chefs know what you are short of
- Back up apprentices with hands-on tasks and house procedures, and cooperate with other chefs and the floor staff
- Stay personally clean and keep your bench spotless
- Stick to HACCP, food safety and workplace safety rules
- Store food correctly, rotate stock and keep the kitchen orderly
- Play your part in a smooth, professional kitchen day after day
Requirements & Eligibility
- Certificate III in Commercial Cookery, or a qualification of equal standing
- Minimum 2 years in genuine commercial kitchens, with some of it spent where volume is high
- You can look after a station with little supervision
- Sharp knife work and solid hands-on cooking
- You know how professional prep and service should be done
- Plates that hit the quality and presentation mark consistently
- Your work record must be open to verification, and your qualifications and backing paperwork must be on hand where required
- A good communicator who works well with others
- Dependable and responsible, keeping a cool head and an orderly bench when it is busy
- Free to work a rotating roster that includes nights, weekends and public holidays
- Full working rights in Australia
- Prepared to serve a 6-month probationary period
- Visa sponsorship may be considered for eligible candidates, depending on verified qualifications, experience, skills and what the employer needs
