Alongside the head chefs, you will protect standards, organise each service, lift the crew's ability and keep every dish identical night after night.

Key Responsibilities
- Share leadership of the brigade and day-to-day running, stepping up to run the whole kitchen whenever the head chefs are off
- Line up mise en place and service so work moves without bottlenecks, giving direction on the line all night
- Turn out Japanese-inspired food at a fine dining level, with portions, look, taste and consistency right every time
- Shape menus and seasonal specials with the head chefs, and develop and trial fresh recipes
- Coach junior cooks on the job
- Track how productive the kitchen is and look for smarter ways of working
- Place orders, manage stock and store food correctly, rotating it and keeping waste low
- Help keep food spend and wage costs in check
- Enforce tight food safety, hygiene and safe-work standards
- Look after equipment, benches and prep zones, keeping the kitchen tidy and professional
Requirements & Eligibility
- Proven time working as Sous Chef, Junior Sous Chef or at another senior chef level
- Has worked in an upmarket restaurant or a busy, high-volume professional kitchen
- Japanese cuisine experience is strongly preferred
- Excellent cook who knows professional kitchen procedures well
- Cares deeply about good produce and beautifully presented food
- Can lead, organise and inspire a brigade, and has helped junior chefs build their skills
- Thorough knowledge of hygiene and food safety practice
- Precise and consistent, and keeps many tasks moving during a rush
- Communicates clearly and gets on well with people; very well organised and manages time well
- Dependable, adaptable and committed, and free to work nights, weekends and public holidays
- Relevant culinary qualifications are desirable
- Overseas applicants must satisfy applicable Australian employment and sponsorship requirements and be prepared to move to the Australian Capital Territory
